Fried Rice
This delicious Indonesian dish is a meal in itself! Vegetarians can substitute omit the meat or substitute sauteed cubes of tofu. Enjoy it with an equally delicious and light salad with peanut sauce. Ingredients:1/4 cup vegetable oil1 large onion, finely chopped 1 1/2 tsp. minced garlic 1 tsp. minced ginger 3/4 tsp. turmeric 1/2 to 2 tsp. chilli paste 1 tsp. shrimp paste 1 cup diced cooked meat(optional) 1 cup diced mixed vegetables 3/4 cup shredded Napa cabbage 1 cup chopped bean sprouts 6-8 cups cooked white rice 1/2 cup thick coconut milk 2 Tbsp. tamarind water 1 Tbsp. kecap manis or dark soy sauce 2 eggs fried onion flakes fresh coriander (cilantro) Instructions:Beat eggs and make an omelette in a heated non-stick pan. When cooked, cut into shreds. Heat oil in a large wok. Stir-fry onion and garlic for 1½ minutes. Add ginger, turmeric, chilli paste, and shrimp paste and stir-fry for 2-3 minutes. Add meat and vegetables; stir-fry 5 minutes. Add cabbage and bean sprouts; stir-fry a further 2-3 minutes. Add rice, season to taste, and stir-fry over high heat 1 minute. Add coconut milk, tamarind water, and kecap manis or dark sauce. Shape the rice into a cone on a platter. Garnish with omelette shreds, fried onion flakes, and coriander.Download a printable version of this recipe here |

Vegetable Salad with Peanut Sauce
This is a perfect main dish for vegetarians, with noodles, vegetables, and peanut sauce. It can be served cold as a salad. Ingredients:1 small lettuce head, separated2 large boiled potatoes, sliced 1 1/2 cups sliced green beans or long beans, parboiled 1 1/2 cups fresh bean sprouts, blanched 1 1/2 cups shredded white or Napa cabbage, blanched 2-3 medium tomatoes, cut into wedges 1 medium onion, sliced 2-3 spring onions, cut into 1-inch lengths 1 medium cucumber, sliced 2 slices pineapple, cubed 1 cup fresh herbs, such as coriander, basil, parsley 1-2 fresh red chillies, seeded and shredded 2-4 hard-boiled eggs omelette shreds peanut sauce Instructions:Arrange lettuce on a platter with potato slices overlapped around the edge. Toss remaining vegetables and pineapple together until well mixed and pile into the centre of the platter. Surround with herbs and chilli shreds. Quarter the eggs and arrange on the salad; cover with omelette shreds. Chill. Pour on peanut sauce before serving.Download a printable version of this recipe here |
